In her presentation, Isabel will discuss egg replacement in bakery against a backdrop of factors putting strain on bakeries including the rising costs of raw materials and ingredients, as well as the growing popularity in flexitarian diets as consumers become more explorative in what they consume and the role alternative, plant-based ingredients can play in this.
She will discuss BENEO’s faba bean protein solution and the factors that were considered in the search for egg replacement – which including ensuring the ingredient performs just as well, can be baked with, and produces a muffin that is tasty and has a good crumb structure.
Isabel’s session will discuss the plant-based sector and its growing popularity among consumers, as well as the opportunities that are in place for bakeries.
