Uelzena – an experienced milk fat specialist for the bakery industries

Uelzena eG is a dairy cooperative located in Northern Germany. All the milk-based ingredients of the Uelzena Group are marketed by the site-wide Uelzena Ingredients division, which focuses on the product groups of milk powder, butter, anhydrous milk fat, cheese and other milk products such as sweetened condensed milk and cream. The Uelzena Group has three production sites in Uelzen, Bismark and Warmsen, as well as a joint venture in Neumünster. The milk-based ingredient range is sold jointly by Uelzena eG and WS Warmsener Spezialitäten GmbH.  

Wide range of milk fats for bakery and confectionery industry 

The product range of milk fats for the bakery and confectionery industry includes German branded butter, baker’s butter with carotene, lamination butter for making puff pastries as sheets or blocks, pure anhydrous milk fat, concentrated butter with added vanillin or carotene, as well as individually and tailormade developed compounds based on milk fat. The latter are one of the strength of the experienced milk fat specialist.  

Unique technologies for individual milk fat products  

In addition to traditionally churned German branded butter, Uelzena also produces recombined butter. Using this special production process they precisely can define the product properties of the milk fat, e.g. in terms of melting point, texture or plasticity. It also ensures a product quality that is free of fluctuations throughout the year.  

Furthermore, Uelzena is one of a few companies that can separate milk fat into the individual fat fractions with the help of a unique technology. These fractions then can be used for the recombination of butter to specifically influence the melting point or the solid fat distribution by adding low- or high-melting fractions like olein and stearine.  

A special deodorisation plant enables Uelzena to extract the colour and, if necessary, the typical butter taste from the milk fat. This „White AMF“ is ideal for producing of milk products and cheese as well as sweets, biscuit and chocolates with very light-coloured fillings.  

Individual milk fat developments according to customer specifications  

A very special service is the development of individual products and recipes for customers in the baking or confectionery industry, e.g. butterfat with added vegetable fats, customised milk fat compounds or adapted packaging contents and options. This results in products that are specially optimised for the respective application and the customer’s existing processing technology. 

Product quality „Made in Germany“ 

All ingredients are produced directly from fresh milk or cream – free from any food additives and are naturally clean label products.  Uelzena sources the majority of milk, their main raw material, from own contract milk producers in Northern Germany. All ingredients are produced directly from fresh milk or cream – free from any food additives. The company holds all the necessary certifications ranging from ISO 9001, FSSC 22000 and IFS to kosher and halal production.  

The milk fat products are offered in demand-driven packaging options from cartons with inside liners and butter in PE film wrap without carton to anhydrous milk fat in disposable or reusable containers to tanker loads.
