International Bakery catches up with Erwin De Waele, Global R&D Innovation Manager at Dawn Foods discussing company ethos and breakthrough their innovations in the doughnut sector.
Having graduated in food chemistry about 30 years ago and amassing a strong career in food R&D, both at research institutes and in the corporate world, Erwin De Waele has developed a robust understanding of the industry. Erwin’s passions lie in understanding and controlling the interactions taking place within a food product during its preparation, be it in the kitchen, the lab or on the production floor. On top of this, he has noted his deep fascination with Food technology. How tasteless batter can be transformed into beautiful muffins and working with colleagues who share the same drive and interact daily to develop products that are appreciated by customers and consumers all over the world is what motivates him further.
This motivation is what has led him to his role at Dawn Foods, a globally renowned bakery and ingredients manufacturer and distributor, Erwin is now overseeing the development of the Dawn Exceptional® Non-Sticky Donut Glaze. This is a breakthrough innovation that enables Dawn customers to create high quality glazed doughnuts whilst also maintaining a strong shelf life, allowing Dawn Foods to set itself apart from its competitors. Now, Erwin sits down in an interview with International Bakery to discuss the company’s successful doughnut inventions.
1/ Can you provide me with some background on Dawn Foods and what is mission statement?
