With more than 13 years in the food and beverage industry, Danielle is part of the Foodology by Univar Solutions’ technical sales team. Having graduated with a degree in Food and Nutrition from Manchester Metropolitan University in the United Kingdom, Danielle progressed to senior technologist roles in dairy and bakery applications before joining Foodology by Univar Solutions. Her particular expertise lies in dairy and plant-based milk production, beverage, bakery, ready meals and sauces, and meat and plant-based alternatives.
As growing numbers of consumers become conscious of their lifestyle and diets, a major trend explored at Bakery Live will be looking to reformulate bakery products to be healthier, as bakers face technical challenges to reduce levels of fat, sugar and salt.
With this in mind, understanding how to reformulate bakery products as well as what functional ingredients perform well in producing different baked goods is becoming vitally important.
In her session at Bakery Live, Danielle will provide an introduction to healthy baking, discussing the use of different functional ingredients to nutritionally optimise baked goods, focusing on increased protein, fibre, reduced sugar, and fat.
