Bakery Live introduces Dr. Tom Simmons

Ahead of the must-attend virtual event Bakery Live happening this month, 21-22 February, we are pleased to announce our next speaker; Dr. Tom Simmons, Founder and CEO of The Supplant Company.

Dr. Tom Simmons is the CEO and founder of The Supplant Company, a VC-backed food and agri-tech company that uses cutting-edge science to deliver an entirely new category of healthy, planet-friendly bulk ingredients. Dr. Simmons completed his PhD in Molecular Plant Science at the University of Edinburgh in 2013, before undertaking post-doctoral research in advanced plant science at the University of Cambridge.

He first came up with the idea for The Supplant Company in 2016 while experimenting with various novel plant science techniques for improved human and planetary health. Dr. Simmons is a member of the Global Futures Council for Sustainable Development at the World Economic Forum and has held prestigious research fellowships at Cambridge University as well as with the Royal Society of Edinburgh.

As the focus on sustainability within the bakery industry looks at the impact of how raw materials are grown alongside reducing waste, within his session at Bakery Live, Dr. Simmons will stress the importance of including industry’s focus in crop waste as well.

He will explore the trend of upcycling agricultural waste sidestreams within bakery and how new product innovations can support businesses to address consumer demand for more nutritious and more sustainable products.
