International Bakery speaks to Kathryn Bricken, Founder of Doughlicious, about her favourite kind of cookie and what she does in her spare time.

What about working in this industry excites you?  

I love all the friendly foodies. I have never met a mean foodie or one that would not help you with any obstacles. And believe me there are a lot!

Which five people would be your dream dinner table, alive or dead?

  • Ottolenghi

  • My Dad

 What’s your favourite kind of cookie? 

Vegan Salted Caramel

What’s the most exciting place you’ve visited? 

South Africa – the wine and food are amazing!

What do you do in your free time?  

Walk Kevin (our Cavalier King Charles) or make Sourdough something – bread, waffles, scones – I have to waste the starter when I feed it every week.

What message do you live your life by?  

Let that rubbish go!

Who’s had the biggest impact on your life?  

My Mum and Dad.

Name a fond memory.  

My parents and their dinner parties. They were always glamorous and delicious.

What’s your meal of choice?  
Vegetarian and Truffle anything. I have not eaten meat in over 25 years and stopped eating fish this past March. Truffles make everything better!

Could you talk about an exciting experience that happened to you recently? 

Whole Foods was one of our first stockists and they’re always super supportive of all our current products and our new product launches. We knew that they thought highly of us, but we were over the moon when they asked us to be the only factory in London to have the New Global CEO Jason Buechel visit us this past September.
