Breaking Bread: Rosalie Guillem

Rosalie Guillem, Co-Founder of Le Macaron Pastries talks to International Bakery about what excites her working in the bakery industry, what she does in her free time and more

What would you be doing if you weren’t working in this industry?
If I had not founded Le Macaron, I think I would have been a Director of Human Resources. I’ve always enjoyed connecting and working with people, so this seems like it would have been a natural fit. 

What about working in this industry excites you?
We love giving Americans the chance to discover and taste authentic French macarons and pastries. Being able to work with the finest ingredients is exciting and shows the quality of our products.  

Which celebrity would you meet, alive or dead
I’d love to meet Simone Veil or Marie Curie. Both of whom were powerful, resilient French women! 

What’s your favorite snack? 

My favorite snack is a pistachio Gelato with a strawberry macaron on the top.

Where in the world have been your favourite places to visit?
In the United States I have enjoyed visiting Yellowstone National Park. Internationally, I’ve enjoyed Italy, Spain and, of course, France.

What do you do in your free time?
I enjoy preparing desserts for my eight grandchildren, walking, traveling, and playing golf with friends. 

What message do you live your life by?
“A journey of a thousand miles begins with a single step,” Confucius. 

Who’s had the biggest impact on your life? 

My husband has been, and will continue to be, the most impactful person in my life. We met when I was 16 years old and have always worked together.  

Name a time you like to look back on.
When we arrived in Florida from France to build a new life for our family, I am very proud of what we have been able to accomplish.  

What is your most unusual talent?
I speak several languages, but I prefer to listen to people!
