FRITSCH is focusing on continuity at iba 2025 and is presenting a new pastry line with a hygienic design in Düsseldorf, placing special emphasis on good accessibility, quick cleaning, and easy handling of the line.
At the FRITSCH stand D51 in Hall 12, fairgoers can once again this year marvel at the extensive range of FRITSCH machines and lines. As part of the MULTIVAC Group, the company is not only focusing on dough processing but also offering a wide array of solutions in packaging and automation.
With the PROGRESSA pastry, FRITSCH is introducing a new pastry line for retail bakers that stands out for its hygienic features and ease of handling. The hygienic design approach continues the path first set in 2023 with the IMPRESSA bread line and now brings key design features into the pastry segment.
Key hygienic elements include smooth surfaces, watertight covers on threaded connections, and rounded corners that prevent dirt accumulation. A linear quick-release mechanism on the belt—such as on the feed table of the satellite head—ensures easy access, even in tight spaces. The “omega drives” allow the belt to relax completely in seconds, enabling quick and easy cleaning underneath. Additional features include a new folding plough concept and a lighter, easy-to-remove wrapping roller for fast line changeovers. Designed for wet cleaning, this line is also suitable for producing meat-filled products.
The exhibition would not be complete without the ROLLFIX prime dough sheeter. Now equipped with a new controller, the ROLLFIX is even faster and more intuitive to use.
As usual with FRITSCH, visitors can see the machines in action during four live demonstrations each day. Products will be made and baked in an open bakery throughout the fair, and FRITSCH’s dough experts will be available to answer questions and provide guidance at the stand.
An innovative highlight at the event is the “Cooling@Packing” solution from MULTIVAC—an integrated vacuum-based system that cools baked goods inside the packaging machine. This allows products to be packed immediately after baking, keeping them fresher for longer.
Traditional cooling methods involve ambient-temperature spirals or dedicated cooling tunnels, both of which take up significant production space and incur high costs. With the MULTIVAC Cooling@Packing system, items like baguettes, breads, and cookies can be placed directly from the oven into open packs by hygienic robots on the thermoforming machine’s loading station. Once inside, the vacuum chambers reduce product temperature from 95°C to around 30°C within seconds.
This system helps companies save on floor space and energy costs, while also minimising the risk of contamination during the cooling process. Additionally, shorter baking times mean production capacity can increase without compromising quality. The solution is available for integration into MULTIVAC’s high-performance thermoforming packaging machines.
