KRÖNER-STÄRKE reintroduces clean label starch

Clean label ingredients supplier KRÖNER-STÄRKE has reintroduced a starch product from its product portfolio to the market. Its product, STIKKER, is a native, hotswelling, powder-fine starch with a white colour, suitable for batters and other wet coatings.

Further applications for STIKKER include baked goods, ready-mixed flours and pastries. KRÖNER-STÄRKE has cleaned up the unhealthy image associated with breaded or battered foodstuffs, the company has said, as well as developing specialist wheat starches to allow food processors to formulate clean label products which are rich in texture and taste but contain no chemicals.

Starches like STIKKER will be important in facilitating changes in consumer behaviour, as the alternative protein market continues to grow. According to a report by Global Market Insights (GMI), the market exceeded US$60.45 billion in 2021 and is expected to grow by a further 18.5% between 2022-2028 as people’s diets change due to heightened consumer considerations around health and ethical concerns.

STIKKER’s increased stable cold viscosity gives it several advantages including consistency adjustment, acting as thickening agent and being available in organic quality.

The basis for STIKKER’s production is selected wheat flours and untreated, natural spring water from the company’s headquarters in Ibbenburen, Germany. It is a certified clean label ingredient.

Rolling out this product also meets the trend for the growth in the artisan bakery market, the company has said.
