In her session ‘Sourdough and fermentation technology’, Frida will share her experience in providing a wide range of international bakery manufacturers with customised fermentation solutions, with a special eye to sourdough fermentation, its history and its benefits. Rye, wheat and multigrain breads but also pizza, focacce, brioches and crackers: in the last two decades, a key factor in bakery manufacture has been the rediscovery of sourdough, and the development of technologies that make artisan quality possible on an industrial level.
