Bakery Live introduces Joe Brennan

Ahead of the must-attend virtual event Bakery Live happening this month, 21-22 February, we are pleased to announce our next speaker; Joe Brennan, Head of Technical and Regulatory Affairs at UK Flour Millers.

Joe leads UK Flour Millers’ technical team, including the review of contaminants and food safety, assurance, flour fortification, and variety development. He also sits on several external committees including Red Tractor Corps Technical Advisory Committee, Agriculture and Horticulture Development Board Recommended List Wheat Corp Committee, Arable Chain Advisory Group, and is chairperson of the Ergot Working Group. Joe has been with UK Flour Millers since 2016.

The importance of flour quality for bakery production further down the line remains a continually important focus for both millers and bakers, as well as the importance of improving the nutritional content of flours as they’re used to feed the world.

In his session at Bakery Live, Joe Brennan will talk through the preference of UK consumers for white flour and how it has led to novel approaches to improve the nutritional content of wheat and flour in the UK. He will highlight research focusing on increasing the level of nutrients in the endosperm, the grain fraction that makes up white flour, without impacting the performance of the wheat on farm, or the functionality of the flour. In doing so, the nutritional quality of flour can be improved without being noticed or without restricting product choice, so called ‘health by stealth’.
