Chewco reports successful debut at IBIE

Texture Maker successfully debuted its new mochi baking mix brand Chewco at the International Baking Industry Exposition (IBIE) this September, showcasing to visitors its delicacies, smart solutions and consulting services for bakers. For this upcoming holiday season, Chewco is launching mochi doughnuts.

Visitors to Chewco’s booth were taught that each baking mix is made from a blend of Taiwanese rice flour to ensure dough consistency and a bouncy texture, and that mochi doughnuts are a healthier alternative to traditional doughnuts, according to the company, because they are gluten free with less sugar.

Chewco is leveraging automation and digital technologies as part of its one-stop consulting services, showing bakers how to reduce production and labour costs while improving efficiency and customer experiences. This includes the Chewco x Belshaw doughnut station, an automated way of offering mini mochi doughnut samples with the robot Mark V plus RS system.

This also includes the iMvending machine, which allows customers to open one section at a time and retrieve their treat. iMvending can also heat up products, apply UVC to maintain sanitation and provide QR codes for payment. Its integrated software enables insight collection about customer preferences.

“The response we got from the iMvending machine at the show was overwhelmingly positive,” said Tammy Liu, Vice President of Texture Maker. “Visitors were always impressed when the door would open automatically to reveal their mochi doughnut. As customers increasingly seek more tailored experiences, this type of machine can be an incredible asset for bakeries. It also has something delightfully futuristic to it that leaves visitors with a sense of wonder.”

The baking business consultancy services the company offers covers tips and guidance on mochi making, optimising production with partners’ machines and sharing knowledge with aspiring mochi bakers. The company aims to expand US consumers’ access to mochi products and focuses on growth of partnerships with small- and medium-sized businesses in the region.

Chewco will be premiering in Europe at SIAL Paris, where it will showcase a number of frozen mochi doughnut products alongside its partner Couplet sugars. These pre-made treats provide the Chewco texture after defrosting, without having to bake.
