Cybake will present on data-driven production

The Retail Bakers of America (RBA) has invited Cybake bakery software Founder Jane Tyler and pro baker Luke Karl from Cybake USA to present a live event titled ‘Baking Technology: Data-Driven Production Planning and Waste Reduction’ happening 20 March at 2pm CT.

The online session will look at how the replacement of cash registers by EPOS tills means if you run a retail bakery, you are amassing large amounts of data about the performance of your store and products.

Jane and Luke will demonstrate how this new data can be unlocked and used to properly analyse how products are really selling, when they are being sold and whether stores have the right amount of each product line stocked at the right times. They will explain how, armed with this knowledge, retail bakeries can maximise daily sales in every store and keep a good grip on margins of all products.

At a time when bakery operators and their staff are increasingly time-pressured, they will break down how this whole process can be managed by automated forecasting, cutting the need for human calculation and guesswork.

There will also be a demonstration of how similar principles can be applied to in-store bakeries within supermarkets, convenience stores and other retail settings in order to grow sales and reduce waste. There will also be a look at how artificial intelligence heralds a new age in which retail forecasting can be improved even further and why AI is no longer the ‘preserve’ of big industry players.

Jane Tyle also presented a seminar on AI for the RBA as part of its Business of Baking (BOB) sessions at the IBIE in Las Vegas in September, 2022.

“It almost goes without saying that whether you are a single bakery store or a big chain, predicting how much you need to make is the key to profitability,” Jane explained. “The big question is how you do it. We aim to show retail bakers how they can use the data they already have to make decisions based on data, rather than estimation.”
