During this LinkedIn Live session, Léa Ribet and Sandrine Cuisenier will share insights on consumer perceptions of bread, Nutrition & Health, and the scientific evidence behind these perceptions. The presentation is based on two international studies conducted by Lesaffre – a consumer survey and a review of scientific literature: Overcoming Preconceptions: Aligning Consumer Perceptions and Scientific Realities on Bread, Nutrition, and Health.
In 2023, Lesaffre conducted an unprecedented international survey on consumer perceptions of bread*, remarkable for its scale and the richness of its findings. In parallel, the Lesaffre Institute of Science and Technology carried out a literature review, putting the main preconceptions about bread consumption into perspective. These two studies were conducted at a time when eating habits are being transformed by health and well-being considerations.
*Survey conducted in 11 countries (Algeria, Brazil, China, France, Germany, Italy, Japan, Nigeria, Poland, Turkey, United States) with a sample of 1,000 people per country, complemented by a qualitative approach, 22 focus groups in total, carried out with the help of GfK and BrainValue.
