Bakery Live introduces Aurore Ranchon

Ahead of the must-attend virtual event Bakery Live happening this month, 21-22 February, we are pleased to announce our next speaker; Aurore Ranchon, Director of Global Product Development Gluten-Free at Dr. Schär.

Aurore graduated in 2008 from the engineering school of Microbiology and Food Safety in Brest (ex-ESMISAB), now ESIAB Ecole Supérieure d’Ingénieurs en Agroalimentaire de Bretagne Atlantique (univ-brest.fr).

Since 2008, she has worked at Dr. Schär, where she held roles first in the Research & Innovation department, in particular in the field of raw materials and basic research, then in the Product Development department, both in development with third parties and in the production plants.

Since 2017, Aurore has been responsible for the Gluten Free & Conventional Product Development department, comprised of 14 collaborators (both in Trieste and abroad) who follow the development of gluten-free and conventional products and the constant improvement of those already existing for the entire group.

The growing gluten-free market has presented opportunities for manufacturers but there are technical challenges in producing baked goods without gluten.

In this session at Bakery Live, Aurore Ranchon will share valuable perspectives on the production of gluten-free foods and the development process, challenges and innovations in this specific and essential food sector area.
