Voting is now open for the Product of the Year category at the International Bakery Awards 2026, giving readers the opportunity to recognise outstanding bakery products demonstrating innovation, quality and consumer appeal.
The award celebrates the creativity and expertise behind finished bakery products, recognising manufacturers developing exciting new flavours, textures, formats and experiences for consumers around the world.
Recognising Bakery Product Innovation
This year’s shortlist brings together four finalists representing different areas of bakery innovation, from premium pastries and convenient bread formats to naturally fermented products and restaurant-inspired baked goods.
The finalists for Product of the Year 2026 are:
Croissant Loaf – Launched by St Pierre in April 2026, this innovative product combines the convenience of a pre-sliced loaf with the light, flaky texture and rich flavour of a traditional croissant, offering consumers a versatile option for breakfast, brunch and everyday eating occasions.
Legendary Bun – Developed by New York Bakery, these soft potato burger buns are made with real potato and designed to retain flavour and juices. The pre-sliced format brings a premium, restaurant-inspired burger experience into the home.
Sourdough Crumpet Thins – Jason’s Sourdough has introduced a lighter, crispier take on traditional crumpets, using just four simple ingredients and natural sourdough fermentation. The product combines convenience with authentic sourdough flavour and texture.
Maxi Croissant – Developed by Bridor, this 120g ready-to-bake croissant offers a larger, sandwich-ready format suitable for sweet and savoury applications, allowing bakery and foodservice operators to expand their menus beyond traditional breakfast occasions.
Together, the finalists highlight the diversity of product development across the bakery industry and the different approaches manufacturers are taking to meet changing consumer expectations.
Joseph Clarke, Senior Editor of International Bakery, said: “The quality and diversity of nominations we have received this year highlight the creativity, innovation and expertise driving the global bakery industry forward. From exciting new products and innovative ingredients to advanced manufacturing technologies and inspirational industry leaders, there are some exceptional achievements to recognise.
“Now it is over to our readers to decide who deserves to win from our finalists. These awards provide an opportunity for the industry to celebrate the products, solutions and individuals making a genuine contribution to the future of baking, and I would encourage everyone across the sector to get involved and cast their votes.”
