Bakery equipment manufacturer MIWE America, LLC has unveiled the latest version of its MIWE flexbake® technology, designed to help bakeries achieve consistent baking results even when unexpected variations occur during production.

Developed for environments where product quality, repeatability and operational efficiency are critical, MIWE flexbake automatically responds when actual baking conditions differ from the parameters specified in a stored recipe. The proprietary control technology adjusts the baking chamber temperature accordingly, helping operators maintain the intended baking result without requiring constant manual intervention.

The technology is designed to address common production variables that can influence finished product quality. These can include partially loaded trolleys, dough entering the oven at a warmer temperature than anticipated, cooler-than-expected ambient conditions or even an oven door that has inadvertently been left partly open.

By compensating automatically for these fluctuations, MIWE says the system can reduce the risk of inconsistent batches while helping bakery operators minimise the impact of human error.

How does MIWE flexbake maintain consistency?

MIWE flexbake works by learning and storing the baking programme for each individual product under full-load conditions. Once the optimum programme has been established, the technology continuously compares actual operating conditions against this benchmark.

When deviations from the ideal conditions are detected, the system automatically adapts the temperature within the baking chamber to compensate. This enables the oven to work towards the originally intended baking result despite changing production conditions.

The system has been developed for a broad range of bakery and foodservice environments, including industrial-scale bakeries, in-store and retail bakeries, chain restaurants and other operators where maintaining repeatable product quality across multiple batches, shifts or locations is a priority.

Automated process adjustment can be particularly valuable in operations where ovens are used by numerous employees with varying levels of experience. By allowing the oven itself to respond to changing conditions, MIWE flexbake can support greater process reliability while reducing dependence on operators manually identifying and correcting variations.

Which MIWE ovens feature flexbake?

MIWE flexbake is included as standard on several ovens within the manufacturer’s portfolio. These include the MIWE econo convection oven, the MIWE FreshBakeCenter (FBC) retail baking system and the MIWE roll-in e+ production-scale rack oven, as well as other selected models.

The technology reflects the growing emphasis within the bakery sector on intelligent equipment capable of supporting consistent production while simplifying day-to-day operation.

Bakers interested in assessing the system can test MIWE flexbake at the MIWE live baking centre at the company’s headquarters in Middlesex, New Jersey. Testing appointments can be arranged directly through MIWE.
