Südback Exhibitor Spotlight – Fritsch

In Brief

FRITSCH will demonstrate its MULTIFLEX L production line, combining gentle dough punching and turning with flexible cutting technology. Tool-free cutting blades, quick-change folding ploughs and a servo-driven guillotine improve precision while reducing changeover times. Its CSV compact coiling unit handles both filled and unfilled products, while the ROLLFIX prime dough sheeter processes portions weighing up to 20kg. Visitors can see the line in four daily live demonstrations at the show.

The MULTIFLEX L combines the advantages of a gentle punching and turning process with the variety of shapes available with intelligent punching and cutting technology in a single production line. A number of specialised accessories allows the machine to be configured for almost every product, range and operating process.

Flexible Processing and Faster Changeovers

Free-running cutting blades are used for longitudinal cutting. These can be individually swivelled or removed and can be easily fixed to the corresponding shaft without any assembly tools. Another highlight is the new folding plough system, which allows the folding ploughs to be quickly and easily attached and removed. This makes product changes possible in the blink of an eye. The easy adjustment increases process reliability and reduces changeover times.

The travelling movement of the servo-driven guillotine guarantees that the dough pieces are cut accurately and maintain their shape. Separate tables prevent dough pieces from sticking together. In croissant production, the triangles are punched and turned in a single process step. This process is extremely gentle on the dough and ensures a high level of accuracy in terms of shape and position.

The coiling unit CSV compact offers maximum flexibility: one system coils both filled and unfilled products. It secures the dough pieces precisely from below using vacuum, ensuring a reliable coiling process and perfect results every time.

The MULTIFLEX L is fed by a ROLLFIX prime – the high-performance dough sheeter. Thanks to its powerful drive system and a roller gap of up to 50 mm, the ROLLFIX prime can handle dough portions of up to around 20 kilograms. The double spindle on the adjustment roller provides added strength and, together with the selectable infeed speed, enables higher degrees of reduction. As standard, the dough sheeter is also equipped to produce filo dough.

As usual at FRITSCH, visitors can experience the advantages of the MULTIFLEX L in four live demonstrations per day.
