Bakery Live introduces Arnaud Dubat

Ahead of the must-attend virtual event Bakery Live happening next month, 21-22 February, we are pleased to announce our next speaker; Arnaud Dubaut, Business Development Director at KPM Analytics.

Arnaud holds a Master in Sciences and Techniques for the agro food industry and a Master in International Marketing and Strategy. His original background comes from Biochemistry and he also holds a miller’s degree from the French Milling School (ENSMIC).

He started working for CHOPIN Technologies, a KPM Analytics product brand, in 1989. His various occupations in the company (he started as an after sales technician) and his current role, puts him in constant contact with bakery manufacturers and bakery quality control teams.

The importance of flour quality for bakery production further down the line remains a continually important focus for both millers and bakers. Trends and challenges in the flour industry have witnessed alternative flours come to the flour, alongside increased popularity for wholewheat and the established white flour.

In his session at Bakery Live, Arnaud will talk through his extensive experience of working in the flour industry. The baking industry encompasses a mix of traditions, cultures, and never-ending innovations with a wide variety of delicious products. A common denominator in all standard baked products is wheat flour, but often, despite meeting the specifications of a COA (Certificate of Acceptance), bakers still experience quality issues during production. His session will discuss why and how this happens and ways to improve quality using analytical data.
