British Bakels has revealed its top ten sweet bakery flavours to watch for autumn/winter 2026, with salted caramel taking the top spot. Cherry, caramelised biscuit, pistachio and banana also feature strongly, alongside tiramisu, salted maple, brown butter, pumpkin spice and matcha. The company says familiar flavours with fresh twists are gaining traction, while consumer research shows rising approval for salted caramel and growing interest in cherry, spiced biscuit and maple flavours.

British Bakels has revealed its top ten sweet bakery flavours to watch for this autumn/winter, giving bakers insight into the tastes gaining traction with consumers and opportunities to refresh seasonal ranges.

Salted caramel takes the top spot, followed by cherry, caramelised biscuit, pistachio and banana, with tiramisu, salted maple, brown butter, pumpkin spice and matcha completing the top ten.

Familiar flavours gain fresh appeal

The findings point to strong opportunities around familiar flavours with a fresh twist – an area British Bakels can help bakers explore through ingredients including Bakels Sea Salted Billionaire’s Caramel, Dark Cherry Filling and Speculoos spread and crumb, spanning three of the leading flavour trends.

“For bakers, that creates plenty of scope to innovate without asking consumers to make a huge leap. Salted caramel can evolve through sea salt or smoked notes, banana pairs naturally with brown butter or custard, while maple and brown butter can bring a more premium edge to familiar favourites.”

British Bakels’ flavour predictions draw on trends across bakery and adjacent categories including desserts, confectionery, cereals, beverages, dairy and snacking, alongside consumer approval ratings, Mintel data and wider cross-category momentum.

Consumer research highlights growing demand

British Bakels’ consumer research also highlights the strength of several of the leading flavours. Salted caramel’s approval rating increased from 31% for the first half of 2026 to 49% for the second half, while 38% of consumers said they look for cherry flavours in sweet bakery and 39% for spiced biscuit. Maple purchase consideration also increased from 36% in early 2026 to 40% for the second half of the yeari.

Jones continues: “Flavour trends don’t start and stop at the bakery counter. Looking at what is gaining momentum across food and drink gives us an indication of where consumer tastes are heading and, importantly, which trends have the versatility to translate successfully into bakery.
