Dawn Foods have announced the launch of a vegan sponge cake mix, the Dawn Balance Vegan Sponge Cake Mix, V-label certified, is the latest addition to the Dawn vegan range with the same functionality, taste and texture experience as a regular sponge cake mix.
Sponge cakes are known as a light and airy type of cake. The challenges facing making a good vegan sponge is the high number of eggs that are used (approximately 40%) to create that soft, light, fluffy and airy texture.
In the creation of the vegan sponge cake mix, Dawn’s R&D team drew from development experience gained from the successful Vegan American Mixes in the company’s portfolio. As a result, they were able to develop a Vegan Sponge Cake mix with good batter structure and aeration, like any desirable sponge, but without the use of eggs.
