According to analysis of the latest trends data carried by independent flavour house, I.T.S flavours that which also ‘speak colour’ are driving the next wave of innovation in the UK sweet bakery sector.

While bakery has traditionally relied on familiar classics, data from Tastewise analysing social media mentions shows the growing demand for more adventurous flavour combinations that deliver visual appeal, premium positioning and social media impact.

Pink guava is among the fastest-growing bakery flavours, increasing by 137.34%, signalling growing consumer interest in more unusual tropical profiles beyond beverages and confectionery. Its vibrant colour and bright, sweet flavour make a suitable flavour for adding to filling, icings and frostings for doughnuts and premium patisserie products.

Demand for the visual impact of matcha does not seem to be waning but there have been further developments.  Matcha pistachio, for example, has grown by 131.91%, reflecting the continued popularity of two of bakery’s standout premium flavours from the last year. Ube, now a café-inspired ingredient, has also seen significant growth of 42.68% as it transitions from speciality drinks into baked goods.

Premium bakery is also embracing more complex sweetness. Fig & honey has increased by 124.16%, reflecting growing consumer demand for flavours that offer depth, provenance and a more sophisticated style of indulgence. Date syrup is also gaining traction, growing by 10.78% as bakery manufacturers seek natural alternative to processed sugars to add sweetness

Despite growing experimentation, comforting flavours remain central to bakery innovation. Cookie butter has risen by 86.65%, while banana caramel (73.12%) and cinnamon brown sugar (71.84%) demonstrate the appeal of familiar indulgent flavours, but often with a new twist.

Sweet and savoury flavour combinations are also becoming increasingly important in premium bakery. White miso has grown by 70.26%, pairing naturally with caramel, brown butter, chocolate and maple to create more complex flavour profiles. Meanwhile, mango habanero has increased by 119.33%, highlighting continued momentum behind the ‘swicy’ trend that I.T.S identified last year as ‘one to watch’.

Global flavour inspiration remains a key driver too. Black sesame has grown by 35.88%, while cardamom is up 15.15%, supported by the popularity of Middle Eastern sweet bakery.

At the same time, traditional British fruit flavours continue to offer significant opportunities. Damson has increased by 60.31%, while strawberry & rhubarb is up 59.84%, demonstrating that heritage fruit flavours remain highly relevant alongside more globally inspired profiles.
