In the fast-paced world of confectionery production, fat cream preparation is more than just a process step – it is a decisive factor for product quality, efficiency, and versatility. With the new Cream Mixing System (CMS), Bühler offers a state-of-the-art solution for processing fat creams that excels in both warm and cold applications.

Whether for wafers, cakes, biscuits, or other filled baked goods, CMS continuously ensures perfect and consistent texture, stability and homogeneity of your fat cream.

Precision without compromise

CMS is built on intelligent process technology that delivers reliable results for every recipe. For warm applications, the optional Mondotherm scraped surface heat exchanger ensures controlled cooling and precise crystallisation – a critical step for achieving the desired structure and aeration. In cold applications, sold fat masses are gently mixed with other ingredients in the pre-mixer and transported to the buffer tank, making it ideal for water-containing end products such as cakes and a wide variety of other fat-based products.

With programmable mixing sequences and fully adjustable cycles, the process can be tailored precisely to different products and production volumes.

Hygienic design for the highest standards

Meeting the strictest hygienic requirements, Cream Mixing System (CMS), features stainless steel construction, angled profiles for reduced cleaning time, and a self-draining design to prevent cross-contamination. All key components – from the pre-mixer to the buffer tank – are designed for easy access, enabling quick and thorough cleaning with minimal downtime.

Optional EasyClean functions and filtration systems further enhance product safety and quality.

Flexibility that pays off

Available in 500 or 1000 kg/h capacity and in both warm and cold configurations, CMS offers a wide range of options to meet all production requirements. Customers can choose between progressive cavity or rotary lobe pumps, as well as add-ons such as gas injection or magnetic filtration.

Thanks to its compact skid design, CMS requires minimal floor space, offers very short installation times, and is designed to fit in a 20-foot shipping container – perfect for global deployment.

Intuitive operation

The 12″ HMI touch screen grants operators full process visibility and control. Recipes can easily be adjusted, process parameters monitored, and production steps managed with just a few taps. Clear guidance minimises operator error and improves efficiency.

Sustainability meets performance

CMS is not only powerful, but also cost-effective and resource-efficient. Its robust design ensures low maintenance costs and long service life. With high energy efficiency and an optimal price-performance ratio, it is a strategic investment in quality and productivity.

💡 Smart facts to remember

  • Warm and cold fat cream applications – maximum product diversity
  • Compact design – small footprint and short installation time
  • Hygienic construction – easy cleaning, self-draining system
  • Configurable options – pumps, filters, capacities, and more
  • Energy and cost-efficient – low operating costs, long lifespan

With the Cream Mixing System, Bühler combines precision, flexibility, and hygiene to set a new benchmark in fat cream processing – supporting manufacturers to meet market demands with confidence and efficiency.
