Designed for industrial bakeries, FRITSCH’s IMPRESSA bread line combines high output with gentle dough handling, using SoftProcessing technology and a modular design to deliver consistent quality 

The industrial bread line IMPRESSA bread from FRITSCH is characterised by its high output and extremely gentle handling of the dough. The FRITSCH SoftProcessing technology ensures gentle treatment of the dough from the very beginning to the very end of the entire process. The IMPRESSA bread is modular and flexible in structure, which means it can be adapted precisely to the respective customer’s requirements. 

Uniform dough sheet

With its Soft Dough Sheeter (SDS) in combination with the so-called Soft Dough Roller (SDR) the IMPRESSA bread produces a highly uniform dough sheet. The dough sheeter SDS is ideal for processing very soft and pre-proofed doughs It uses fold-up conveyor belts to flour the dough sheet from all sides to reduce the need of oil to produce the dough sheet. A sensor monitors the fill level in the hopper. If it falls below a certain amount, new dough is brought in. This allows for greater precision and more even weight distribution when producing the dough sheet. The following Soft Dough Roller produces a highly uniform dough sheet with extremely well-defined edges and without shearing forces or the use of separating agents. This reduces scrap dough to a minimum throughout the rest of the process. 

Flexible solutions

Due to its modular design the IMPRESSA bread offers high flexibility in terms of producing a wide range of products of the highest quality. After longitudinal cutting, customers can choose between different types of guillotines depending on the application. The high-performance guillotine with its synchronized movement achieves a performance of up to 150 strokes/min. When it comes to the optimal shape of round loaves and bread rolls the bread round moulder comes into play. This specialized machine for processing soft, pre-proofed doughs guarantees a smooth production from 30-gram snack rolls to 1,000-gram heavy loaves. A baguette moulder can be integrated into the line to produce different types of baguettes. For a special individualisation of the products, the Product Decoration Unit is the perfect solution. With this unit decoration patterns can be pressed or cut into the surface of the products. The new twisting unit DTU produces twisted artisanal-style bread rolls reliably and in industrial quantities with a capacity of 60 strokes per minute and row. 

Hygienic Design

With its open design and removable modules, the IMPRESSA bread is readily accessible, making it quick and easy to clean. Important components such as the conveyor belt table of the Soft Dough Sheeter and the Soft Dough Roller can be removed from the line in a few simple steps and taken to the washing area for thorough cleaning. The hygienic design of individual components includes consistent use of smooth surfaces, watertight covers on threaded connections, and rounded corners where no dirt can accumulate. Fold-up knife edges, like those on the feed table of the calibrating head for example, ensure good accessibility even in relatively tight spaces. On the so-called “omega drives”, the belt can be completely relaxed in a matter of seconds, which makes cleaning under belts a quick and easy process as well.
