International Bakery Editor Joseph Clarke explores how bakeries are blending innovation and sustainability to shape the future of cookie production 

The global cookie market continues to thrive, driven by consumers seeking familiarity and comfort in uncertain times. Yet nostalgia alone no longer satisfies the modern bakery shopper. Today’s consumers want more than sweet cookies – they expect indulgence to come with creativity, convenience, and a conscience. Industrial bakeries are answering this call with smarter formulations, cleaner ingredients, and cutting-edge technology that balance pleasure with purpose. 

“Consumers are seeking indulgent treats that fit their changing lifestyles – smaller portions, on-the-go formats, and diverse textures,” says Jonathan Adams, UK NPD Director at Baker & Baker. “We are seeing consumers buying smaller portions with the move to mini cookies, and there is also the trend of uber indulgence; making the ordinary, extraordinary.” 

This delicate balance between nostalgia and novelty, indulgence and responsibility, is defining the next chapter of cookie manufacturing. 

Indulgence Reinvented 

Cookies have long been symbols of comfort, but the way consumers experience indulgence is evolving. “As shoppers continue to face inflationary effects within bakery, taking familiar, comforting flavours but re-inventing them into new formats and textures to create a hyper-sensory experience continues to be the biggest trend for 2026,” explains Adams. 

Texture has emerged as a crucial component of that sensory journey. “Texture is becoming equally as important as flavour,” he continues. “Product formats are evolving to feature multi-textural layers, with high demand for more complex textures and depth of texture playing a pivotal role in appeal. Examples of this include half-and-half cookies, that are growing in popularity and choice.” 

Producers are experimenting with contrasting sensations – crisp exteriors and soft centres, chewy inclusions and crunchy toppings – to elevate what might once have been a simple baked good into a dynamic experience. Ingredient specialists such as Dawn Foods and Bakels are helping bakeries meet this demand, offering versatile bases, natural flavour systems, and stable inclusions that support experimentation without compromising efficiency. 

Premiumisation is also reshaping the market. “A little bit of what you fancy does you good – an old saying that rings true with the modern consumer,” Adams notes. “Taking the guilt out of guilty pleasures, consumers are opting for indulgence in moderation, valuing the feel-good benefits of an occasional treat by opting for more premium, beautifully presented products.” 

From bite-sized cookies packaged like artisanal chocolates to oversized creations loaded with inclusions, bakers are finding new ways to express luxury. “Offering visual delight is key,” Adams adds. “Doughnuts, buns and cookies act as blank canvases for both flavour and visual play. Multi-sensory cookies, filled with a rich soft centre combined with a crunchy topping such as nuts, are also extending the premium end of the cookie range.” 

To achieve these indulgent formats consistently, producers rely on high-performance mixing and depositing systems capable of handling complex doughs and inclusions with precision. The Power of Seasonality 

Themed and seasonal products have become a powerful tool for engaging consumers. “Seasonal trends are increasingly playing a role within the cookie category,” says Adams. “Easter and Halloween options have been available in the marketplace for some time, and we’ve been looking at other seasonal occasions to draw consumers into the category.” 

Baker & Baker’s winter-themed Cadbury Snow Balls chocolate cookie exemplifies this approach, combining a playful theme with premium indulgence. “On the back of this, we have introduced a new winter-themed cookie in the UK this year – a Cadbury Snow Balls chocolate cookie that is available across the retail channel,” Adams adds. 

The growth of seasonal ranges demands flexibility from production lines. Switching between recipes, flavours, and decorative elements at short notice requires adaptable equipment and streamlined processes – areas where automation has transformed large-scale production.
