In June 2025, Lallemand Baking reached a new strategic milestone with the acquisition of AIT Ingredients, a recognised player in ingredient solutions for the bakery, flour milling, and pasta industries. 

This acquisition reflects Lallemand Baking’s ambition to strengthen its international presence while expanding its technological and application expertise dedicated to industrial bakers. Rather than representing a standalone corporate milestone, the integration addresses the growing need for partners capable of addressing industrial baking challenges in a more holistic, application-driven way, combining ingredient expertise, fermentation science, and application support. 

For more than a century, Lallemand Baking has developed recognised expertise in fermentation, microorganism selection, and associated technologies. AIT Ingredients brings more than twenty years of know-how in ingredient formulation and a deep understanding of industrial challenges related to bakery and milling applications. 

The complementarity between the two companies quickly became evident. Together, they combine scientific excellence, formulation expertise, extensive application knowledge, and strong proximity to the field.
