For 60 years, KÖNIG has worked with bakers worldwide to advance the production of rolls and small baked goods without compromising product quality or character. During this time, we have developed solutions for mixing and lifting, dividing and rounding, proofing, stamping and forming, baking, cooling and freezing. Today, KÖNIG delivers individual machines and integrated production concepts for every output level and bakery size.

Bakeries need technology that can grow with their business. Skilled labour is scarce, product ranges are expanding, and expectations for hygiene, efficiency and consistent quality continue to rise. At südback 2026, KÖNIG will present two key solutions for different production requirements, united by one objective: making bakery production simpler, more flexible and more reliable.

Scaling automation with production needs

The new KÖNIG Industrie Rex Evo EC dividing and rounding machine combines industrial performance with straightforward operation in a compact footprint. It processes dough pieces from 28 to 280 grams and achieves up to 24,000 pieces per hour in an eight-row configuration. Intuitive controls reduce training requirements and operating errors. The open KÖNIG Easy Clean design, large access doors and separation of drive and dough areas simplify cleaning and maintenance. The result is high machine availability with fewer production interruptions.

The second highlight is the new FORTUNA Premium K forming and cutting line, presented in dough demonstrations with the globally proven KÖNIG Basic Rex. Designed for bakeries seeking reliable automation at a medium output level, the five-row Basic Rex gently divides and rounds up to 7,500 dough pieces per hour. The proofer combines forming and cutting functions within one compact line.

Proven KÖNIG Rex technology and FORTUNA expertise enable the production of round, long-rolled, stamped and cut rolls with consistent artisanal quality. The accessible production process makes it easy to adjust capacity and product variety as requirements change.

Together, these innovations demonstrate KÖNIG’s scalable approach. The Premium K with Basic Rex provides a practical next step into automated roll production, while the Industrie Rex Evo EC meets higher capacity and flexibility requirements. Both solutions focus on more than output: they are designed around the bakery, its products and its plans for growth, supporting confident planning as each business develops.

More flexibility across dough processing

Visitors will also get a first look at the new KÖNIG Artisan SFP EC, a modular dough-sheet processing platform for one- to ten-row production, with outputs of up to 30,000 pieces and a dough throughput of up to 2,500 kilograms per hour. Designed for piece weights from 45 to 650 grams, the SFP EC combines precise cross-cutting and rounding with additional optional modules, providing flexibility for a broad range of square and round products.

At südback 2026, Koenig invites visitors to discuss their products, capacity targets and production challenges with our team and identify the right path to automation. Visitors can also experience dough demonstrations on the Artisan SFE EC and the Premium K, seeing efficient Easy Clean lines for commercial production.
