COFALEC unveils new video tracing yeast’s journey from a single cell to industrial scale, and its role across food, health and sustainability
COFALEC, the European Confederation of Yeast Producers, the European Confederation of Yeast Producers, released a new video dedicated to explaining what yeast is and why it matters, produced in close collaboration with creative agency Living Brand.
The video follows yeast from a single mother cell selected in a laboratory to industrial-scale production, where a few milligrams are multiplied into tonnes of yeast supplying Europe’s bakeries, breweries and food producers. It also highlights yeast’s growing role beyond traditional fermentation, including its contribution to human nutrition, alternative proteins, sustainable agriculture, bioenergy, pollution control and waste treatment, and its place within a genuine circular economy, as production residues are transformed into natural fertiliser and animal feed.
This initiative comes at a pivotal moment for the sector. Yeast, a living microorganism, is still confused in several EU markets with chemical raising agents sold under similar names, a discrepancy that affects consumer understanding and the functioning of the EU’s internal market. By making the science behind yeast accessible to a broad audience, COFALEC aims to support more informed public discourse and contribute to ongoing discussions on food labelling and terminology at EU level.

The video forms part of COFALEC’s broader communication campaign to build science-based public and policy understanding of yeast, ahead of ongoing discussions on food labelling and terminology at EU level.
