Innophos has released an expanded LEVAIR® Baking Solutions Guide, bringing together its portfolio of speciality bakery ingredients and formulation expertise to help commercial manufacturers tackle challenges including dough handling, texture, shelf life, clean-label formulation and protein fortification.
The new guide has been developed as an easy-to-reference resource for manufacturers seeking to optimise existing bakery formulations or develop new products in response to changing consumer and production requirements.
Innophos’ LEVAIR portfolio covers a broad range of bakery applications, including breads, biscuits, crackers, muffins, cake mixes, doughnuts, frozen and refrigerated dough, tortillas, bars and products made with alternative flours. The solutions are designed to support product quality while helping industrial bakers address processing efficiency, consistency and waste reduction.
Supporting modern bakery formulation
Among the technologies covered by the portfolio is LEVAIR Optimize, a range of clean-label enzyme solutions developed to improve bakery processing performance while supporting longer shelf life and finished-product quality.
The range is designed to address challenges including dough handling, processing tolerance, moisture management, texture and freshness across bread, sweet bakery and high-protein applications.
For example, LEVAIR Optimize 4000 has been developed to support moisture management and shelf-life extension while making dough easier to manage during production. Shelf-life requirements are another major focus. LEVAIR ESL has been developed to help manufacturers reduce stale products while maintaining characteristics including volume and texture.
