At the 2025 International Bakery Awards, Lallemand Baking’s Do-Bake True has been named Innovation of the Year, recognising a breakthrough solution that addresses some of the most pressing challenges in modern bread production.

The awards celebrate excellence across the global bakery and confectionery industries, highlighting the technologies, products and companies that are driving progress in quality, efficiency and sustainability.

Do-Bake True was singled out by the judges for its significant contribution to clean-label and wholegrain baking, offering bakers a way to improve texture, volume and dough performance while increasing fibre content – all without compromising product quality or label simplicity. Designed specifically for wholegrain and high-fibre formulations, the solution helps overcome long-standing technical barriers that have traditionally limited consumer acceptance of healthier bread options.

By supporting better crumb structure and sensory appeal in fibre-rich recipes, Do-Bake True enables bakeries to meet growing consumer demand for nutritious products while maintaining consistency and production efficiency at scale. Judges described the innovation as a major step forward for the industry, positioning it as a transformative tool for bakers navigating health-driven reformulation.

This year’s Innovation of the Year finalists reflected the breadth of technological advancement shaping the bakery sector. GEA’s E-Bake impressed with its focus on automation and thermal optimisation, Falk Thermal’s BakeSpike showcased novel approaches to heat transfer, and Goodway Technologies’ PureBelt was recognised for advancing hygiene and sanitation in belt cleaning systems.

With its win, Do-Bake True stands out as an innovation that bridges technical performance and consumer expectation, demonstrating how ingredient-led solutions can unlock healthier bakery products without sacrificing quality.

The 2025 International Bakery & Confectionery Awards continues to spotlight the ingenuity, expertise and forward-thinking solutions shaping the future of the bakery industry.
