Bread Ahead, the independent artisan bakery founded at Borough Market, will open its doors in Harpenden on Monday 12 October, marking its first bakery outside London and the first to launch under its new owner-operator growth model. The 2,500 sq ft bakery and baking school will bring Bread Ahead’s artisan baking and all-day dining to Harpenden High Street, paving the way for a new generation of owner-operated bakeries across the UK’s regional and market towns. 

Putting people at the heart of Bread Ahead’s growth

While Bread Ahead has grown steadily in recent years, it remains proudly independent, with its people and products at the heart of the business. The new owner-operator model is designed to build on that ethos, giving talented people within Bread Ahead the opportunity to progress their careers, take on greater responsibility and ultimately run their own bakery, with a share in its success.

For Bread Ahead, the approach is about investing in the people who have helped build the business and giving them the opportunity to build something of their own, rather than simply growing through a conventional roll-out of new sites. It is designed to be a genuine win-win: operators have a personal and professional stake in the success of their bakery and the opportunity to build their own future, while Bread Ahead benefits from highly motivated people who know the brand inside out and are invested in making each bakery thrive. The model also creates an attractive proposition for landlords, with experienced, invested operators at the helm and a long-term focus on building successful businesses within their local communities.

Harpenden is the first example of this approach, with Bread Ahead now looking at the potential for further growth in UK regional and market towns, with the right people, locations and communities at the heart of any future opportunity.

At the helm of the Harpenden bakery will be a long-standing member of the Bread Ahead team who has built their career within the business and demonstrated a strong commitment to the brand over many years. Having progressed through the company and become a valued ambassador for Bread Ahead, they will now take the next step in their career as owner-operator of the new bakery, with a share in its success and the opportunity to build a business that reflects both their experience and the needs of the local community.

A new community hub for Harpenden

Bread Ahead Harpenden will bring its full artisan bakery offering to the High Street, with sourdough and artisan breads, pastries, breakfast and brunch freshly made throughout the day. The much-loved Crème Brûlée Doughnut will be joined by Bread Ahead’s full spectrum of doughnut flavours, from firm favourites to seasonal specials and new creations. A streamlined breakfast and brunch menu will sit alongside coffee and drinks, creating a welcoming destination throughout the day. The bakery will be designed as a welcoming, family-friendly space, with a children’s book corner, buggy space, high-speed Wi-Fi and air conditioning, creating somewhere to eat, work, meet and spend time together. The ambition is for Bread Ahead Harpenden to become a much-loved local meeting point and community hub at the heart of the High Street.

Baking and education will remain central to the Harpenden offering. A dedicated upstairs baking classroom will provide a versatile space for Bread Ahead’s renowned hands-on workshops, as well as a space for private hire. Workshop bookings for January 2027 will open ahead of the new year, bringing Bread Ahead’s baking education to a new community.
